Crispy and healthy chickpea salad for everyone
A healthier version of the Caesar salad, this is equally tasty as well. If you are on a diet this is the go to recipe when you are craving for Caesar salad. This salad has all fresh ingredients which you can easily avail in the market and hence rest assured that you can prepare this salad just right.
Ingredients:
- 2 cans chickpeas- rinsed and drained
- Extra virgin olive oil – 2 table spoon
- Kosher salt to taste
- Black pepper- freshly grounded
- Mayonnaise- ¼ cup
- Lemon juice- 2 table spoon
- Parmesan- 2 table spoon and grated
- Dijon mustard- 1 table spoon
- Garlic cloves- 2, finely chopped
- Anchovy paste- 1 tea spoon
- Kale- chopped and tough stems removed- 1 large cup
- Pepper- 2, deseeded and sliced thinly

If you want to prepare this dish then you will have to follow the below steps in order to get the dish done in a proper way, please make sure you do follow the steps accurately to get best flavor,
- Roast the chickpeas along with olive oil, salt and pepper in 425 F ovens for 30 minutes and then let it cool.
- Whisk mayonnaise, lemon juice, Dijon, salt to taste, pepper, and anchovy paste in another large bowl. Add the ingredients which are remaining in this bowl and toss them together further till everything is thoroughly coated in the dressing.
- Garnish it with herbs of your choice and some nuts. You can serve this salad chilled or in room temperature and tweak the recipe to make it non-vegetarian as well whichever way you want to have it.
