- 1 whole chicken- diced into small pieces
- 4 medium sized carrots- halved
- 4 stalks of celery- halved
- 1 large onion finely chopped
- Water- 2 liters
- Salt and pepper according to your taste
- 1 tea spoon of chicken bouillon granules
- Parsley chopped for garnishing
Directions:
- In a large soup pot put the chicken (which has been thoroughly washed), carrots, celery, and onion and then adds cold water to it. Turn on the heat and let it simmer and do so until the chicken meat starts falling if the bones. Stir occasionally to skim off the foam every now and then.
- Take the chicken and the vegetables out of the pot and then strain the broth. Separate the bones and the meat and then chop the carrots, celery and onions into smaller pieces. Add salt, pepper and chicken bouillon as per taste. Then add the chicken and the veggies again and stir them together. Let it simmer covered in low heat for another 10 minutes. Serve it in separate bowls garnished with parsley.
