A salad that you can make during the springs when all the ingredients are easily available and is also fresh, the Baja salad is a healthy salad option as well. Ingredients:
For the cilantro dressing:
- ¼ cup of packed cilantro leaves
- 1 garlic clove
- 2 table spoon of fresh lime
- 2 table spoon of the liquid of pickles red onions
- ¼ cup of olive oil
Salad:
- Coarsely torn lettuce- 3 cups
- Green cabbage- 1 ½ cup
- Radishes- 4 cut into fine strips
- Carrot- 1 chopped thinly
- Cherry tomatoes- halved, 1 cup
- Pickled red onions
- 2 small avocadoes
- Feta cheese coarsely grated
- Toasted shelled pumpkin seeds- 3 table spoon
- Tortilla chips- crumbled, 1 ½ cup
Directions:
- In a food processor, blend the ingredients in the list for the cilantro dressing together. While it is being blended, slowly pour the oil and add salt to taste.
- Right before serving, toss lightly all the veggies and the fruits and the cover it entirely with the dressing. Add the cheese and crumbled tortilla chips on top and serve immediately.
