Ingredients:
- Sweet potatoes- thickly sliced
- ¼ cup of water
- Canola oil- 2 table spoon
- Kosher salt to taste
- Black pepper
- Black eye peas- 2cans, rinsed and drained
- Oil packed tuna- 2, 5 oz. cans
- ¼ cup of cider vinegar
- Chopped basil- ¼ cup
Directions:
- In a microwave safe bowl, microwave the sweet potatoes along with water for 8 minutes. Ensure it is being covered and then drain the excess water. Sprinkle the boiled potatoes with salt, pepper and brush olive oil on them. Grill them on medium high for 15 minutes and ensure it is done evenly. Cut it into chunks. Well when you cut it make sure that you cut in a proper shape as what happens is that, there are many times when making the preparation the shape does matter, it will be make sure that your dish looks better when served.
- In another large bowl, toss the peas tuna, carrots, cider vinegar, basil, canola oil and salt together. Then add the potatoes by the side of the bowl. Serve it immediately. This is going to yield enough salad for four servings and you can tweak the recipe to add some personal touch as well to it.
