Healthy and tasty chicken soup with vegetables
There are various types of chicken soup recipes and nothing can beat the taste of a slowed cooked variation. This particular recipe is enhanced with various vegetables and hence high in nutritional value. The following recipe is easy to prepare you can easily get the ingredients in the market as well.
Ingredients:
- 4 potatoes- peeled and diced
- 2 carrots- peeled and sliced
- 2 brown onions- diced
- 4 sticks of celery- sliced
- Canned onion soup
- 6 chicken thighs whole- trimmed of all fat
- Salt and pepper to taste
- Chicken stock- 6 cups
Directions:
- In a large pot place all the vegetables according to the order in the list. Mix the onion soup into chicken stock and pour it over the vegetables. Push the chicken thighs under the liquid and let it slow cook for at least 1 ½ hours. But then, you may be confused with the color of the dish after 1 hour time, as it will look like that the dish is done, however it is better that you wait for another 30 minute time to get the best flavor.
- Remove the chicken from the pot when it is absolutely tender and the meat is falling off the bones. Shred the meat and throw away the bones.
- Put the meat back to the broth that is being prepared and let it cooks for another 10 minutes with the lid shut down.
- Stir the brother every 30 minutes to make sure nothing sticks to the bottom.
- Serve the soup garnished with chili flakes and coriander leaves and serves it steaming hot along with garlic breads.
